Lasagna & Garlic Bread

It’s snowing, I still don’t have a stove so what’s a girl to do? Make Lasagna in the toaster oven.

I had bolognese in the freezer so I let that thaw for the day. Stevo braved the ‘Holy shit, it’s snowing!!’ crowds and picked up some ricotta, eggs, mozzarella and Barilla no-boil noodles.

My breville toaster oven is awesome but it’s not going to fit a 9×13” pryex. Thankfully, I had two small stone dishes that fit perfectly.

I mixed the ricotta with one egg, a teaspoon of Herb de Provence, salt, pepper, and a couple teaspoons of sugar.

Whisk it well!

I sprayed non-stick cooking spray in the dishes and added a thin layer of the sauce. Next goes a layer of noodles. I spooned a 1/4 cup of the ricotta mixture, a handful of shredded mozzarella and a small amount of parm over the noodles.  I added another layer of noodles and a 1/4 cup of sauce….. Another noodle and the cheeses.

Once I had reached the top of the dishes, I added some more sauce, mozzarella and parm.

Preheat the oven (or toaster oven, in my case) to 375.

Cover the dishes in foil and bake for 30 mins. Remove the foil and bake for another 15.

Let it set!! It’s crucial to let the lasagna hang for at least 10 mins.

While it’s chilling, make some yummy garlic bread.
