Sounds fancy, doesn’t it?? Well it’s not and it’s actually been referred to as orange chicken in our house, for more than 30 years. This is another Carter classic…. Make a little go a long way for 6 kids and it damn well better taste great AND be quick. Check, check and check.
Ingredients:
3 chicken breasts
16 Oz bottle of Russian dressing
Half a packet of Lipton onion soup mix
1 cup of Marmalade or apricot jam
A little bit of parsley for color
Preheat the oven to 350°.
Put the chicken in a casserole dish and season with salt and pepper.
Mix everything else in a bowl and pour it over the chicken.
Bake for 45 minutes.
That’s it… No joke.
Now, I cannot eat my orange chicken without mashed potatoes….
Yep, that would be the infamous canned corn. I said it was a fancy meal, didn’t I???
This recipe was courtesy of my great aunt, Sancee. Actually, it was really her friend, Jeannette, because poor Sancee wasn’t much of a cook. When we were shipped off to spend a night with Sancee, this was always prepared.
Breakfast, the next morning, wasn’t nearly as memorable…. (who serves scrambled eggs without ketchup???).
